They\u2019re so simple to make from scratch and very unfussy\u2014no need to separate the eggs, or whip up the egg whites!   • Mix gently<\/strong> and don\u2019t overdo it<\/strong>! <\/strong>Lumpy pancake batter is the key to the fluffiest pancakes, and overmixing makes them tough instead of tender.<\/li>\n
  • Rest the batter<\/strong>. In my recipe tests, I found that the last batch of pancakes cooked were fluffier than the first. The solution: Letting the batter rest for about 5 minutes before cooking gives the flour time to hydrate for the most pillowy pancakes.<\/li>\n
  • Cook a test pancake<\/strong> first<\/strong>. If you\u2019re new to making pancakes or it\u2019s been a while, start with a test pancake to ensure your skillet or griddle is at the right temp. Medium heat is usually perfect, but you may need to experiment a bit to find the temperature that works best for you. <\/li>\n<\/ul>\n

    How to Make Buttermilk Pancakes<\/h2>\n

    Combine all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a large bowl. Whisk to combine, then make a well in the center.<\/p>\n
