You have to first farm the grapes and make the wine, which, as anybody who\u2019s worked a harvest, rotated a barrel or wrestled a recalcitrant hose can tell you, is no easy task.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Then you need to extract the alcohol. This is not so labor intensive, but it\u2019s especially hard on the wine as you must subject it to the sort of technological manipulation that good winemakers abhor. Essentially, that means putting it through vacuum distillation using <a class=\"css-yywogo\" href=\"https:\/\/www.smithsonianmag.com\/innovation\/the-science-behind-nonalcoholic-wine-180980805\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">a spinning cone<\/a> to deconstruct the wine into its component parts. You then set aside the alcohol and reassemble the other piece into a coherent whole.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Unfortunately, what remains lacks more than the alcohol. In wine, alcohol plays a greater role than as an intoxicant. It adds richness and body, it carries flavors and aromas, and it\u2019s essential to the balance and structure of a wine. If it\u2019s removed, something else must do that work.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Winemakers around the world have thrown themselves into the challenge for good reasons aside from the desire for an appealing nonalcoholic drink. While sales of alcoholic beverages have been stagnant over the last couple of years, the market for nonalcoholic beverages has rocketed upward. It grew by <a class=\"css-yywogo\" href=\"https:\/\/nielseniq.com\/global\/en\/insights\/analysis\/2024\/non-alcohol-a-mindful-moderator-in-the-us\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">more than 30 percent<\/a> last year, according to Nielsen, fueled primarily by concerns over wellness and moderation.<\/p>\n<\/div>\n<aside class=\"css-ew4tgv\" aria-label=\"companion column\"\/><\/div>\n<div data-testid=\"companionColumn-1\">\n<div class=\"css-53u6y8\">\n<p class=\"css-at9mc1 evys1bk0\">Naturally, producers from brewers to liquor companies want to capitalize on this trend. Bartenders can make compelling nonalcoholic cocktails by leaving out spirits. It\u2019s simply a matter of creating <a class=\"css-yywogo\" href=\"https:\/\/cooking.nytimes.com\/68861692-nyt-cooking\/44315396-mocktail-and-other-nonalcoholic-drink-recipes\" title=\"\">beautiful, balanced combinations<\/a>. Brewers can <a class=\"css-yywogo\" href=\"https:\/\/nabeerclub.com\/how-non-alcoholic-beer-is-made\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">control the fermentation of beers<\/a> to prevent the formation of alcohol, and can augment other ingredients like hops and malt to add flavors.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">But the obstacles for winemakers are particularly daunting. Wine generally has much more alcohol and higher acidity than beer, and alcohol plays a larger role in its structure compared with other beverages.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">\u201cOnce you take the alcohol out of the wine, you\u2019re losing a lot of the support,\u201d said Aaron Pott, of <a class=\"css-yywogo\" href=\"https:\/\/pottwine.com\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Pott Wine<\/a> in Napa Valley who, with a partner, Stephanie Honig, also makes nonalcoholic wines under the <a class=\"css-yywogo\" href=\"https:\/\/www.missingthorn.com\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Missing Thorn<\/a> label. \u201cIt\u2019s a sweet element and a density element, and a lot of people go to sugar to replace it.\u201d<\/p>\n<p class=\"css-at9mc1 evys1bk0\">It\u2019s a difficult problem, but not an impossible one. Over the last few weeks, I\u2019ve tried several dozen nonalcoholic wines along with a number of wine alternatives, nonalcoholic beverages that are created to mimic wines rather than wines with the alcohol removed.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Most of them I found unpleasant. Many were cloyingly sweet. Others were out of balance or incomplete, as if the middle had been hollowed out. One was punishingly acidic. But I did find 10 bottles that, while I would not mistake them for good wine, I would drink happily if I were handed a glass at a party at which I was trying to avoid alcohol.<\/p>\n<\/div>\n<aside class=\"css-ew4tgv\" aria-label=\"companion column\"\/><\/div>\n<div data-testid=\"companionColumn-2\">\n<div class=\"css-53u6y8\">\n<p class=\"css-at9mc1 evys1bk0\">Let\u2019s be clear: All of these are efforts in search of a solution \u2014 how to make perfectly winelike nonalcoholic wines \u2014 that has not yet arrived. We are early in the learning curve. Serious producers of nonalcoholic wines have discovered that simply trying to replace the alcohol of, say, a good German riesling or California pinot noir with other ingredients is a supreme challenge. They must instead rethink the whole process.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">When Constance Jablonski and Maggie Frerejean-Taittinger decided in 2019 that they wanted to make a nonalcoholic sparkling wine, they enlisted Ms. Frerejean-Taittinger\u2019s husband, Rodolphe Frerejean-Taittinger, who happened to be the chief executive of the Champagne house <a class=\"css-yywogo\" href=\"https:\/\/frerejeanfreres.com\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Frerejean Fr\u00e8res<\/a>, and began experimenting.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">\u201cWe realized you can take the best wine in the world and it\u2019s not going to make a good alcohol-free wine,\u201d he said in an interview. Mr. Frerejean-Taittinger likened making a good nonalcoholic wine to making Cognac.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">\u201cWith Cognac, you need to create a base wine,\u201d he said. \u201cMost of the time, it\u2019s literally undrinkable.\u201d<\/p>\n<p class=\"css-at9mc1 evys1bk0\">They decided to center the production of their new company, <a class=\"css-yywogo\" href=\"https:\/\/us.frenchbloom.com\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">French Bloom<\/a>, in <a class=\"css-yywogo\" href=\"https:\/\/www.wine-searcher.com\/regions-limoux?srsltid=AfmBOoqfskoRGa8CWnXX8rP1DCUcsiF2RVygVcl9y_AiJ3KRCP4I84Iq\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Limoux<\/a> in Languedoc, itself a historic center of sparkling wine production, a warmer, sunnier place that would produce riper grapes than in Champagne. It\u2019s also a less expensive place to do business.<\/p>\n<\/div>\n<aside class=\"css-ew4tgv\" aria-label=\"companion column\"\/><\/div>\n<div data-testid=\"companionColumn-3\">\n<div class=\"css-53u6y8\">\n<p class=\"css-at9mc1 evys1bk0\">\u201cWe needed a terroir where you have more sun, more alcohol and more muscle, but also a good level of acidity,\u201d he said. Ms. Frerejean-Taittinger said they wanted a sparkling wine that would be made of organic ingredients and not full of sugar or chemicals and with no added sulfur dioxide, an almost universally used stabilizer and antioxidant.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Right now, they are making four different French Bloom sparkling wines. Le Blanc, made of sparkling spring water, dealcoholized wine, lemon juice and natural grape flavors, was too sweet, I thought, more like grape juice than wine. Le Ros\u00e9 was made similarly, with some dealcoholized pinot noir for color. It was even sweeter. Both sell for $39.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">The other two were definite steps up. An extra brut blanc de blancs was made of dealcoholized chardonnay along with a bit of salt and the other ingredients. It had the richness and floral, winy flavor that I was missing in the first two, with a clean, dry aftertaste. It was very good.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">At the top of the line was Le Cuv\u00e9e, a vintage-dated (2022) blanc de blancs intended to resemble a well-aged Champagne. Indeed, it was creamy, with a light caramel note like what might come from the gentle oxidation of long aging, though it seemed a touch too pronounced.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">The blanc de blancs costs $59 and Le Cuv\u00e9e $119. Champagne prices for Champagne facsimiles.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Mr. Frerejean-Taittinger described the winemaking process as an evolution in which they were striving for less sweetness, particularly in the ros\u00e9, and more finesse.<\/p>\n<\/div>\n<aside class=\"css-ew4tgv\" aria-label=\"companion column\"\/><\/div>\n<div data-testid=\"companionColumn-4\">\n<div class=\"css-53u6y8\">\n<p class=\"css-at9mc1 evys1bk0\">The Missing Thorn wines, made by Mr. Pott in California, were also quite good. The white was made with dealcoholized albari\u00f1o, water, grape juice concentrate, natural flavors and gum arabic, which Mr. Pott called a \u201cflavor encapsulator,\u201d giving his wines more richness and density. It was balanced and seemed relatively complete with a minimal sense of missing components. The red, made with dealcoholized malbec, was likewise balanced and refreshing.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Mr. Pott said choosing the right grapes for nonalcoholic wines was essential.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">\u201cIt has to have a lot of varietal character,\u201d he said. \u201cI think you need varieties that are really aromatic because you lose a lot.\u201d<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Some wine substitutes skirted that issue by skipping the dealcoholization process entirely. These were the wine alternatives, beverages that try to balance flavor and acidity in a way resembling wine without beginning with wine.<\/p>\n<p class=\"css-at9mc1 evys1bk0\"><a class=\"css-yywogo\" href=\"https:\/\/drinkproxies.com\/?srsltid=AfmBOooZUL0NC9Grq65Bi_uxYrWU7sksVOX6YrfYU_IIAztXnltoSGLc\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Proxies<\/a> Blank Slate, for example, uses sauvignon blanc grapes and verjus, an acidic juice made by pressing unripe fruit, along with various fruit concentrates and flavor extracts. It was dry and juicy with flavors of apricots and grapefruits.<\/p>\n<p class=\"css-at9mc1 evys1bk0\"><a class=\"css-yywogo\" href=\"https:\/\/drinkkally.com\/?srsltid=AfmBOoqmc1aNl32Y5mYv1dP4D-sDbNWn9t5PAtNGrQ_2-p05QWRYr2x1\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Kally<\/a> Golden Sparkler, another wine alternative, which also used verjus and other ingredients, was dry and floral, with tart citrus flavors and a delicious tang and texture.<\/p>\n<\/div>\n<aside class=\"css-ew4tgv\" aria-label=\"companion column\"\/><\/div>\n<div data-testid=\"companionColumn-5\">\n<div class=\"css-53u6y8\">\n<p class=\"css-at9mc1 evys1bk0\">Because these wine alternatives don\u2019t require the technological manipulation that the nonalcoholic wines do, it seems easier to create complete, satisfying beverages.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">Since the market for all these nonalcoholic products is growing so rapidly, they are becoming easier to find. In New York, where I live, I found them in selected grocery stores and at two shops dedicated to them: <a class=\"css-yywogo\" href=\"https:\/\/boisson.co\/?srsltid=AfmBOopWQ_Q7GmvSN9onWN-e-HYZcibxmtg_PmSmC587gY2JL7Q5cyUT\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Boisson<\/a> and <a class=\"css-yywogo\" href=\"https:\/\/www.spiritedaway.co\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Spirited Away<\/a>. But don\u2019t bother looking for them in wine shops. New York is <a class=\"css-yywogo\" href=\"https:\/\/www.supermarketnews.com\/beverages\/non-alcoholic-beverages-may-soon-be-sold-in-new-york-liquor-stores\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">one of 17 states<\/a> that does not allow nonalcoholic versions of wine, beer or spirits to be sold in wine and liquor stores.<\/p>\n<h2 class=\"css-1u37br4 eoo0vm40\" id=\"link-239f29ab\">Nonalcoholic Options to Try<\/h2>\n<p class=\"css-at9mc1 evys1bk0\">Here are the 10 products I liked in order of least to most expensive.<\/p>\n<p class=\"css-at9mc1 evys1bk0\"><strong class=\"css-8qgvsz ebyp5n10\"><a class=\"css-yywogo\" href=\"https:\/\/www.giesenwines.com\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Giesen<\/a><\/strong><strong class=\"css-8qgvsz ebyp5n10\"> Dealcoholized New Zealand Sauvignon Blanc, $18<\/strong> Not complete but, aromatically, it certainly suggests New Zealand sauvignon blanc.<\/p>\n<p class=\"css-at9mc1 evys1bk0\"><strong class=\"css-8qgvsz ebyp5n10\"><a class=\"css-yywogo\" href=\"https:\/\/drinkhollowleg.com\/\" title=\"\" rel=\"noopener noreferrer\" target=\"_blank\">Hollow Leg<\/a><\/strong><strong class=\"css-8qgvsz ebyp5n10\"> Alcohol Free Cabernet Sauvignon, $20<\/strong> Smooth, relatively complete with a pleasant aftertaste.
