I honestly think I stumbled upon this recipe on a label of peach chutney that was given to me as a gift for being a groomsman at a friend\u2019s wedding.  But I cannot imagine any wedding in the deep South (where I grew up) in which groomsman would be given jars of peach chutney.  At this late stage of life, there is way too much water under the bridge to piece together the \u201cwhere\u2019s\u201d and the \u201cwhen\u2019s\u201d\u2026.let\u2019s just enjoy this fantastic mixture of flavors.<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong>INGREDIENTS<\/strong><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 lbs Satchel\u2019s smoked chicken (you can use your own baked or grilled chicken but the  smokey flavor is nice)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 cup mayo<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 stalks celery diced<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/4 cup Major Gray\u2019s Mango Chutney (check condiment aisle at Kroger or Meijer) (one day, I hope to meet Major Gray\u2026he must be a great, great man)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 Tablespoon curry powder<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/2 cup raisins<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/2 toasted sliced almonds<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">salt and pepper to taste<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong>INSTRUCTIONS<\/strong>:  Pretty simple directions\u2026..just mix everything together.  Add more mayo, curry and salt to taste.  <\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">There are a million variations you can try (add finely chopped onion, add scallions, try it with some mustard, how about a bit of lemon juice, use a different style of curry powder, make your own curry powder\u2026the list goes on) but my favorite is straight-up with minor adjustments to mayo, curry, and salt as needed.  <\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">And for those of you who are trying to avoid mayo, two things.  First, my God, I am so, so sorry.  Is life even worth living?  Second, you can substitute greek yogurt and it will still be pretty yummy.
