But even as the season turns, I\u2019m not ready just yet for the fruit-forward and slushy drinks I\u2019ll be craving at the beach in a few months. Enter the <a href=\"https:\/\/punchdrink.com\/recipes\/white-negroni-tonic\/\" target=\"_blank\" rel=\"noopener\">White Negroni &amp; Tonic<\/a> from Rolo\u2019s, my perfect spring cocktail.<\/span><\/p>\n<p>&#13;<\/p>\n<p><span style=\"font-weight: 400;\">The drink, which was created by the restaurant\u2019s director of operations, Ben Howell, begins as a typical White Negroni, with Luxardo Bitter Bianco swapped in for <a href=\"https:\/\/punchdrink.com\/articles\/how-to-use-suze-cocktail-recipes\/\" target=\"_blank\" rel=\"noopener\">Suze<\/a>. The mix is topped with tonic, which plays well with the botanical notes of the gin. For the base, Rolo\u2019s recommends Forthave Spirits Blue, which is made from cane sugar rather than grain, giving the spirit a \u201csturdier, chubbier body\u201d that rounds out the drink\u2014though any gin will do the trick.\u00a0<\/span><\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p><span style=\"font-weight: 400;\">The White Negroni &amp; Tonic is bright, refreshing and easy to drink, an ideal pairing for the restaurant\u2019s comforting menu focused on wood-fired dishes. \u201cIt\u2019s so delicious, but it\u2019s so light,\u201d says Leo Bayless-Hall, Rolo\u2019s beverage director, of the cocktail, a favorite of his on the menu. While many <a href=\"https:\/\/punchdrink.com\/articles\/white-negroni-cocktail-recipes-aperitivo\/\" target=\"_blank\" rel=\"noopener\">White Negronis<\/a> are tinted yellow, this one\u2019s clear look adds to it being \u201cclassy,\u201d he says. \u201cI\u2019ve got a real big thing about drinks being crystal clear. I think that it\u2019s so sexy and fun, period.\u201d\u00a0<\/span><\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p><span style=\"font-weight: 400;\">The White Negroni &amp; Tonic captures the overall ethos of the bar menu.
