Seven years in the making, Debt Collector will be the only full \u2018grain to bottle\u2019 bourbon-style whisky currently available in the UK, with every step of the production process taking place at the Battersea distillery, from milling, mashing and fermentation to copper pot distillation and maturation.<\/p>\n<p>Debt Collector challenges traditional British whisky-making conventions by meticulously following authentic bourbon production methods, marking a new era in the London spirits landscape. Made with a mash of 75% corn, complemented by malted barley and rye, this innovative spirit is aged for a minimum of three years in virgin, charred American oak casks, delivering rich notes of vanilla, caramel, and warming spice (\u00a349.95 Doghouse Distillery.com).<\/p>\n<p>The production process adheres to traditional bourbon methods with two key differences: Doghouse is based in London rather than America, and they lauter the mash for \u2018off grain\u2019<br \/>fermentation while implementing a sour mashing process that enhances both flavour<br \/>consistency and helps the distillery reach its sustainability goals.<\/p>\n<div class=\"wp-block-media-text is-stacked-on-mobile\" style=\"grid-template-columns:53% auto\">\n<figure class=\"wp-block-media-text__media\"><img loading=\"lazy\" decoding=\"async\" width=\"604\" height=\"755\" src=\"https:\/\/barmagazine.co.uk\/wp-content\/uploads\/2025\/03\/Branden-1.jpg\" alt=\"\" class=\"wp-image-61462 size-full\" srcset=\"https:\/\/barmagazine.co.uk\/wp-content\/uploads\/2025\/03\/Branden-1.jpg 604w, https:\/\/barmagazine.co.uk\/wp-content\/uploads\/2025\/03\/Branden-1-240x300.jpg 240w, https:\/\/barmagazine.co.uk\/wp-content\/uploads\/2025\/03\/Branden-1-268x335.jpg 268w\" sizes=\"auto, (max-width: 604px) 100vw, 604px\"\/><\/figure>\n<div class=\"wp-block-media-text__content\">\n<p>\u201cI love bourbon,\u201d says <strong>Founder and Managing Director Braden Saunders <\/strong>who was responsible for developing the concept, \u201cThe Scots do Scotch so well, the Irish similarly have their own style and they\u2019ve been doing it for centuries. If we were in Europe, making a Scotch-style whisky would entice me, but in London I don\u2019t have that same feeling. I think making something multi-grain, taking inspiration from America, is much more interesting. Particularly when most other new distilleries are also making single malts, it gives us a level of differentiation in the space.\u201d<\/p>\n<\/div>\n<\/div>\n<p>Saunders adds, \u201cHigh corn produces an easy, mellow whisky. Looking at cocktails, very few are made with Scotch. Bourbon is much more approachable and inclusive and fun in that sense.\u201d<\/p>\n<p>Following the 2023 moonshine releases (unaged and 1 year cask aged corn spirit), Debt Collector is bottled at 50% ABV or \u2018100 proof\u2019 (as a nod to its origins) and represents seven years of dedication to the craft of whisky-making in the heart of London.<\/p>\n<p>The spirit\u2019s distinctive branding pays homage to America\u2019s Prohibition era where corn whisky or bourbon came to the fore. The striking label artwork, brought to life by artist, Stefan Koppel, features a skeletal gangster character executed in the same airbrush art style found on custom Harley-Davidson fuel tanks and \u2018hot-rod\u2019 cars. This visual narrative celebrates the rebellious spirit of speakeasies and moonshine culture that flourished during those historic times where booze was cash and cash was king. Cue the Blues Rock playlist and pour a stiff one!<\/p>\n<p>With this first small batch limited release, Debt Collector promises to be in high demand.
