How do you walk sourdough? Well I just needed a name for my bread and I was going on a walk so that\u2019s what I named it. I should have called it \u201cQuick get some dough ready, we\u2019re out of bread.\u201d<br \/>I fed my starter in the morning, was out of bread, wouldn\u2019t be able to bake early the next day, but wanted to start some dough that I could bake as soon as I could get to it. So I made up this dough:<span id=\"more-6275\"\/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-6279 size-full\" src=\"http:\/\/www.northwestsourdough.com\/wp-content\/uploads\/2017\/05\/walking4_600.jpg\" alt=\"\" width=\"600\" height=\"338\" srcset=\"https:\/\/northwestsourdough.com\/wp-content\/uploads\/2017\/05\/walking4_600.jpg 600w, https:\/\/northwestsourdough.com\/wp-content\/uploads\/2017\/05\/walking4_600-533x300.jpg 533w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\"\/><\/p>\n<p><strong>Walking Sourdough Bread<\/strong><\/p>\n<ul>\n<li><strong>220 grams of 100% hydration starter<\/strong><\/li>\n<li><strong>500 grams water<\/strong><\/li>\n<li><strong>700 grams bread flour<\/strong><\/li>\n<li><strong>100 grams of whole wheat flour ( I used up some home milled flour that was a few days old)<\/strong><\/li>\n<li><strong>17 grams sea salt.<\/strong><\/li>\n<\/ul>\n<p><strong> 1537 grams of dough at 67% hydration ( a good hydration to practice your scoring technique).<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-6280 size-full\" src=\"http:\/\/www.northwestsourdough.com\/wp-content\/uploads\/2017\/05\/walking5_600.jpg\" alt=\"\" width=\"600\" height=\"338\" srcset=\"https:\/\/northwestsourdough.com\/wp-content\/uploads\/2017\/05\/walking5_600.jpg 600w, https:\/\/northwestsourdough.com\/wp-content\/uploads\/2017\/05\/walking5_600-533x300.jpg 533w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\"\/><\/p>\n<p>I threw all the ingredients in the <a href=\"http:\/\/www.northwestsourdough.com\/baking-equipment-pan-sizes-dough-trough\/\">dough trough<\/a> about 2:00 pm, mixed up the dough with no autolyse and no folding. I covered the dough and put it in the fridge. Then I went on my walk.<br \/>Next day I had to go out, so I wasn\u2019t able to get to the dough until 3:00 pm.<br \/>I took out the dough and it had a few nice bubbles (not a lot though).<br \/>I divided the dough into two pieces (it was never folded but you can do a fold or two if you like) and shaped up the dough once, no pre-shape, just final shape.
