There&#8217;s something about the combination of delicious flavours, and lovely aromatic curry sauce which makes it taste amazing! It&#8217;s very easy for babies to eat too &#8211; whether clumsily using a spoon, or with little fingers. Aaliyah would happily feed herself with a spoon, or chuck the spoon and pick up the green beans or a cube of chicken and munch away.\u00a0<\/p>\n<p>A taste of yummy Thai cuisine for baby, the green beans in this curry are an excellent source of vitamin K, thought to play a role in building strong bones and assisting in blood clotting to heal wounds. Exactly what your little one will need when running around.<\/p>\n<p>Total prep and cooking time &#8211; 25 mins Suitable for freezing<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li><strong>1\u00bd tbsp olive oil<\/strong><strong> 1 onion \u2013 peeled, chopped<\/strong><\/li>\n<li><strong>\u00bd tsp minced garlic<\/strong><strong> <\/strong><\/li>\n<li><strong>\u00bd tsp minced ginger<\/strong><strong> <\/strong><\/li>\n<li><strong>\u00bc tsp ground turmeric<\/strong><strong> <\/strong><\/li>\n<li><strong>\u00bc tsp ground cumin<\/strong><strong> 1 tomato \u2013 washed<\/strong><strong> <\/strong><\/li>\n<li><strong>150ml unsweetened coconut milk (organic)<\/strong><strong> <\/strong><\/li>\n<li><strong>1 tbsp fresh lemon juice \u2013 ensure no seeds fall in<\/strong><strong> <\/strong><\/li>\n<li><strong>\u00bd lemongrass stalk \u2013 trimmed, dry outer layers removed, tender core bashed<\/strong><strong> <\/strong><\/li>\n<li><strong>\u00bc tsp ground garam masala<\/strong><strong> 1 chicken breast fillet (skinless) \u2013 cut into cubes<\/strong><strong> <\/strong><\/li>\n<li><strong>60g green beans \u2013 washed, trimmed, cut into 2.5cm lengths<\/strong><\/li>\n<\/ul>\n<h3>Method<\/h3>\n<p>Heat the oil in a saucepan on low heat, add the onion and saut\u00e9 for 3\u20134 minutes until soft and golden. Add the garlic, ginger, turmeric and cumin, grate in the tomato, and allow the spices to cook for 30 seconds to 1 minute. Add the coconut milk, lemon juice, lemongrass and garam masala and simmer on low heat for 5\u20136 minutes until the sauce begins to thicken.<\/p>\n<p>Add the chicken pieces to the sauce, stir and simmer gently for 6\u20138 minutes or until the chicken is tender and no longer pink inside. While the chicken is cooking, steam the green beans for 5\u20136 minutes until tender and set aside.<\/p>\n<p>Once the chicken is fully cooked, remove the lemongrass stalk and add the green beans. Combine well, mash or chop as required, and serve warm with overcooked mushy rice for your little one, or why not give noodles a go?
