Ingredients<\/h2>\n<p>One of our <a href=\"https:\/\/www.rexbakery.com\/about-rex-artisan-bakery\/\">4 principles<\/a> is to always select the best, premium ingredients we can find. \u00a0We\u2019ve <a href=\"https:\/\/www.rexbakery.com\/if-you-love-what-you-do-it-really-matters\/\">explained how we exhaustively selected our sausagemeat<\/a> for our sausage rolls,\u00a0that we will only use organic flour with no cheating additives across the bakery, about the <a href=\"https:\/\/www.rexbakery.com\/elect-vote-for-quality\/\">special creme-fraiche Normandy patisserie butter<\/a> that we use.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"size-medium wp-image-48377 alignleft\" src=\"https:\/\/rexbakery.com\/wp-content\/uploads\/2016\/11\/croxton-butter-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\"\/>Unfortunately we have seen price increases in many of the ingredients we select, and we have been unable to find any\u00a0cheaper alternative that passed our standards. \u00a0There is rampant food inflation in:<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li><strong>Butter<\/strong>. \u00a0You may have noticed yourselves how even traditional unsalted butter prices have gone up +30% in some supermarkets. \u00a0That\u2019s because there is a demand &amp; supply issue in Britain and our country imports a lot of butter from France &amp; beyond. \u00a0At Rex, we use a LOT\u00a0of butter\u2026. \ud83d\ude41<\/li>\n<li><strong>Fruits &amp; vegetables<\/strong>. \u00a0Many of the fresh produce we buy every week is imported from Spain &amp; Holland<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li><strong>Nuts &amp; seeds<\/strong>. \u00a0Britian doesn\u2019t\u00a0even produce all\u00a0the ingredients we use (sunflower seeds, almonds, walnuts\u2026) \u00a0so are highly subject to dollar &amp; euro exchange rate changes<\/li>\n<\/ul>\n<p>The truth is that for a best selling\u00a0product like gluten-free Boiled Orange Cake, the orange &amp; ground almond we use makes the cake now far more expensive than a traditional flour-based cake.<\/p>\n<h2>2\/ Staff costs<\/h2>\n<p>We are proud to now employ &gt;25 talented, lovely people in Rex \u2013 we suspect that\u2019s more than anybody else on the parade. \u00a0We have permanent full timers, part timers and a roster of occasional hours weekend\u00a0&amp; holidays staff. \u00a0We have always\u00a0had a policy of paying above the minimum wage for each age group so the announcements regarding Living Wage don\u2019t change anything on paper\u2026 although they do in reality, because we of course need to\u00a0move all the pay scales each\u00a0Budget. \u00a0Our wage bill is some +70% higher today than the day we opened but <strong>ahem<\/strong>, that\u2019s not true of our bottom line!!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-47813 alignleft\" src=\"https:\/\/rexbakery.com\/wp-content\/uploads\/2020\/09\/glenn-making-sourdough-1024x736-1-300x216.jpg\" alt=\"\" width=\"300\" height=\"216\"\/>In particular we hope we can continue to attract our skilled craft bakers into Rex. \u00a0 \u00a0With the demise of British bakery colleges &amp; qualifications coupled with the prevalence in \u201cpushing a button\u201d mass production line baking operations in this country \u2013 we have found that it is harder &amp; harder to find, attract to Little Chalfont and then keep the right artisan bakers. \u00a0Thank goodness for our European highly skilled \u00a0neighbours who love <a href=\"https:\/\/www.sustainweb.org\/realbread\/\">Real Bread<\/a> &amp; know how to make it! \u00a0 Although we do fear that the Home Office is pretty unlikely to recognise that they must include Artisan Baker as one of the skilled welcomed professions for new arrivals once UK exits from the EU \u2013 perhaps we need to start sending a Rex Sourdough or two to Theresa May\u00a0in her\u00a0nearby Maidenhead constituency\u00a0to make the case!!<\/p>\n<p>The government is pushing more &amp; more labour costs on to the small employer \u2013 we already have to\u00a0pay Employers\u2019 National Insurance on top of wages, we need to provide a pension with contributions from next tax year, and must fund\u00a0sickness benefit claims\u00a0(of course on top of replacement staff costs). \u00a0Not sure the local GPs fully know that it\u2019s no longer the Government picking up the bill when they issue sick notes\u2026.<\/p>\n<h2>3\/ Red tape<\/h2>\n<p>What we never guessed was how much of our precious bread sales would be absorbed by admin\u00a0\u2013 nothing is free or value-added for a small business. \u00a0Here\u2019s some of the costs we have to fund:<\/p>\n<ul>\n<li><strong>bank charges<\/strong>. \u00a0Hundreds of pounds every month on contactless &amp; card payment fees; a fee for every deposit &amp; every payment, this would all be free of charge in your home bank account. \u00a0We need to sell\u00a0a lot of baguettes to cover just those!<\/li>\n<li><strong>Business rates<\/strong>. \u00a0Somehow our shop is charged\u00a0more\u00a0<strong>thousands<\/strong> of pounds every year\u00a0than any other shop in the parade, and the rateable value set by some quango or other appears to be unchallengeable. <a href=\"http:\/\/www.ipswichstar.co.uk\/news\/rates_review_sparks_shop_closure_fears_in_southwold_1_4783059\">\u00a0Some bakeries have lost their discount in other parts of the country<\/a>, which could be the difference between profit and loss, staying in their shop or choosing to\u00a0go elewhere for them. \u00a0Note \u2013 this is just a tax on being in business, that the local council collects &amp; passes to central government. \u00a0It provides NO VALUE \u00a0EXCHANGE WHATSOEVER to the business paying it.<\/li>\n<li><strong>Waste disposal<\/strong>. \u00a0Whilst we have a fantastic arrangement with both the <a href=\"https:\/\/www.epilepsysociety.org.uk\/?gclid=CjwKEAiAyO_BBRDOgM-K8MGWpmYSJACePQ9ChnuY8mk0HmR8Hubka1VG1mTpFcqqp_zhEYdgWWie-BoCxAjw_wcB\">Epilepsy Centre<\/a> &amp; a local pig farmer to reuse our leftover bread each day, we have a lot of process-production &amp; packaging rubbish, all the time. \u00a0No friendly council bin men to pick it all up unfortunately, instead this is a big money spinner\u00a0for companies like Grundon. \u00a0New statutory recycling &amp; waste limit targets mean that we have seen\u00a0our waste collection fees rocket to thousands of pounds per year and we have become zealots about our bin systems to try to contain them.<\/li>\n<li><strong>Our business is governed<\/strong>\u00a0by rigorous\u00a0local\u00a0inspectors &amp; councillors. \u00a0We even had to pay hundreds in a retrospective \u201cplanning fee\u201d just to site\u00a0a couple of tables &amp; chairs right\u00a0outside of our shop on warmer days\u2026<\/li>\n<\/ul>\n<p>Now. \u00a0Have we put off anybody out there\u00a0from opening up (yet another) food business\u00a0anywhere near the Parade hahaha?? \u00a0 \u00a0But never fear, we have invested a LOT \u00a0\u2013 money, time, effort, heart, heads\u2026 into No 4 Chenies Parade to recoup, so we\u2019ll just carry on rolling with these many costs &amp; pressures. \u00a0All the time that our\u00a0many &amp; lovely Friends of Rex come looking for Real Bread, we will proudly continue\u00a0to be in a similar\u00a0price range\u00a0of other premium, healthy foods.<br \/>Given our\u00a0ingredients are undoubtedly\u00a0much higher quality than other local food businesses, this means we will continue to\u00a0offer outstanding value to shoppers. \u00a0Hope this gives you some insight to the challenges of balancing the books in Rex \u2013 and how we NEED &amp; thank you for your continued support more than ever
