Yes,<br \/>\n  I&#8217;m an older sister, and being bossy comes naturally to me, but in this<br \/>\n  instance, the type of chocolate you buy MATTERS.\u00a0\n<\/p>\n<h3 style=\"text-align: left;\">Bittersweet Chocolate<\/h3>\n<div>\n  I always use<br \/>\n  <b><a href=\"https:\/\/www.heb.com\/product-detail\/ghirardelli-premium-60-cacao-bittersweet-chocolate-baking-bar\/275411\" target=\"_blank\">Ghirardelli.<\/a><\/b><br \/>\n  It&#8217;s easy to find, and the quality is always excellent.\u00a0\n<\/div>\n<h3 style=\"text-align: left;\">Dutch-Processed Cocoa<\/h3>\n<p>\n  This doesn&#8217;t matter as much. As long as it&#8217;s a Dutch-process cocoa, you&#8217;ll be<br \/>\n  good. This type of cocoa has a deep, rich color which signals your eyes that<br \/>\n  something decadent is happening here. (Surprisingly, Dutch-process cocoa has a<br \/>\n  slightly milder taste than natural cocoa. Please, please, I&#8217;m begging you &#8211; use<br \/>\n  Guittard Milk Chocolate Chips. They are absolutely divine and worlds away from<br \/>\n  any other milk chocolate chip you will find.\u00a0\n<\/p>\n<div>\n  My grocery store (hi, HEB) carries them, but you can also buy them at<br \/>\n  <b><a href=\"https:\/\/www.worldmarket.com\/p\/guittard-milk-chocolate-baking-chips-531612.html?ppc=true&amp;mrkgadid=&amp;mrkgcl=660&amp;mrkgen=&amp;mrkgbflag=&amp;mrkgcat=&amp;camp=ppc%3Agoogle%3A_pMax_%2BConsumables&amp;acctid=21700000001660222&amp;dskeywordid=&amp;lid=58700008439922133&amp;dsproductgroupid=&amp;product_id=531612&amp;merchid=5165106&amp;prodctry=US&amp;prodlang=en&amp;channel=online&amp;storeid=&amp;device=c&amp;network=x&amp;matchtype=&amp;locationid=1026695&amp;creative=&amp;targetid=&amp;campaignid=20276579494&amp;adgroupid=&amp;gclsrc=aw.ds&amp;gad_source=1&amp;gclid=Cj0KCQjwkN--BhDkARIsAD_mnIotGyZcouE1URrIuZY2Td9GryMz0SK9-vSyctszcF2m8nL4mhH0YNUaAp9KEALw_wcB\" target=\"_blank\">World Market<br \/>\n    <\/a><\/b>or directly from<br \/>\n  <b><a href=\"https:\/\/www.guittard.com\/our-chocolate\/detail\/milk-chocolate-chips\" target=\"_blank\">Guittard<\/a><\/b>.\u00a0\n<\/div>\n<h3 style=\"text-align: left;\">White Chocolate Chips<\/h3>\n<div>\n  Again, let&#8217;s go with Guittard. Guittard white chocolate chips are<br \/>\n  called\u00a0<b><a href=\"https:\/\/www.guittard.com\/our-chocolate\/detail\/choc-au-lait-baking-chips\" target=\"_blank\">Choc-Au-Lait White Baking Chips<\/a><\/b>. They&#8217;re a creamy white chip with cocoa butter and vanilla. Not cloyingly<br \/>\n  sweet like some.\u00a0\n<\/div>\n<div>\n  I typically<br \/>\n  <b><a href=\"https:\/\/www.bakeat350.net\/search\/label\/brownies%20and%20blondies\" target=\"_blank\">make brownies<\/a><\/b><br \/>\n  in a 13&#215;9&#8243; pan, but these are made in an 8&#8243; square pan.\u00a0\n<\/div>\n<div>\n  The baking instructions have a little tweak, so read through the instructions<br \/>\n  carefully. I adapted the recipe from<b><a href=\"https:\/\/cooking.nytimes.com\/\" target=\"_blank\"><br \/>\n      New York Times Cooking<br \/>\n    <\/a><\/b>and kept their baking method.\u00a0\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: left;\">\n  <a href=\"https:\/\/www.bakeat350.net\/p\/var-pfheaderimgurl-var-pfheadertagline_17.html\" style=\"clear: left; float: left; margin-bottom: 1em; margin-right: 1em;\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" data-original-height=\"50\" data-original-width=\"200\" height=\"50\" src=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEg-epggBqsrbKybj6MvLeZLujo8wSTvkZ143GTmOdTJ8qJExqmPuoOiAsveXwZOZ52GU2N5OmcKLnY3gXGbCJ8DytzakRb87xQmverdOgNdlpqivylaFcYW_QmXF11WxDxqDxqecSDFWsQOIgpH4UTyRjmRSuIzKtoiYjIU1C8ZOcppPTj-it503Hs2jjw\/s1600\/print%20recipe%201-21.jpg\" width=\"200\"\/><\/a>\n<\/div>\n<p><\/p>\n<div>\n<p>YIELD: 16 brownies<\/p>\n<p>PREP TIME: 20 minutes<\/p>\n<p>BAKE TIME:\u00a0<\/p>\n<p>\n    1\/2 cup unsalted butter, cut into pieces, plus more for greasing pan\n  <\/p>\n<p>\n    4 ounces chopped bittersweet (about 60-70 percent) chocolate, such as<br \/>\n    Ghirardelli\n  <\/p>\n<p>1 teaspoon instant espresso powder<\/p>\n<p>3\/4 cup granulated sugar<\/p>\n<p>1\/2 cup packed cup light brown sugar<\/p>\n<p>2 large eggs, at room temperature<\/p>\n<p>2 teaspoons vanilla extract<\/p>\n<p>1 teaspoon kosher salt\u00a0<\/p>\n<p>1\/2 cup unbleached, all-purpose flour<\/p>\n<p>1\/2 cup Dutch-processed cocoa powder<\/p>\n<p>4 ounces Guittard milk chocolate chips<\/p>\n<p>4 ounces Guittard white chocolate chips<\/p>\n<\/div>\n<p>\n  Preheat the oven to 350 degrees. Grease an 8&#8243; square pan with butter and line<br \/>\n  with one piece of parchment paper, creating an overhang on two of the four<br \/>\n  sides. Butter over the parchment.\n<\/p>\n<p>\n  In a medium saucepan, melt the butter and bittersweet chocolate over low heat.<br \/>\n  Be careful not to overheat, removing the pan from heat as soon as the<br \/>\n  chocolate has melted.\n<\/p>\n<p>Stir in the espresso powder and set aside.<\/p>\n<p>\n  In a large bowl of an electric mixer, beat the granulated sugar, brown sugar,<br \/>\n  eggs, vanilla, and kosher salt for about 2 minutes until most of the sugar has<br \/>\n  dissolved. Beat on low speed while gradually pouring the melted chocolate<br \/>\n  towards the edge of the bowl. Mix until combined.\u00a0\n<\/p>\n<p>\n  Add the flour and cocoa powder and mix on low speed until no dry spots remain.<br \/>\n  Fold in about 3\/4 of the milk and white chocolate chips, saving the rest for<br \/>\n  the top. Pour batter into the prepared pan, spreading evenly with an offset<br \/>\n  spatula. Sprinkle the remaining milk and white chocolate chips over the top.\n<\/p>\n<p>\n  <b>[NOTE: Here&#8217;s where you should pay attention to the baking method.]<\/b>\u00a0Bake the batter for 15 minutes. Place a double-layer of kitchen towel<br \/>\n  on your countertop. Remove the pan from the oven and bang it on the counter<br \/>\n  once or twice until cracks start to form on the surface. This ensures a fudgy,<br \/>\n  but not dense, texture.\u00a0\n<\/p>\n<p>\n  Sprinkle with flaky sea salt and return to the oven for 10 to 12 minutes until<br \/>\n  the edges are set and the center is no longer wobbly when the pan is jiggled.<br \/>\n  (A toothpick inserted will <b>not<\/b> come out clean.)\n<\/p>\n<p>\n  Remove to a wire cooling rack. Before cutting, cool completely to room<br \/>\n  temperature in the pan. Use a bench scraper to cut into small squares.
