Christmas! Any meal!). With large loaves like this, it never ceases to amaze me how simply scaling up the size of a loaf transforms it so profoundly, but that\u2019s precisely what happens, especially with this beer bread. For this hefty \u201chop miche,\u201d I take it up a couple of notches past just increasing its weight by adding a dark stout beer to the mix for added flavor\u2014but not by adding the thick, syrupy liquid directly. No, we\u2019re doing something different than I\u2019ve done in the past.<\/p>\n<p>Instead of adding the malty beer alongside the water in the recipe, I use it in a tangzhong with whole rye flour. Essentially, I\u2019m pre-cooking the flour with the beer, which amplifies the beer and grain flavor and aroma. It also brings softness to the crumb with a long-keeping quality (<a href=\"https:\/\/www.theperfectloaf.com\/how-to-make-and-use-tangzhong\/\" data-type=\"post\" data-id=\"22691\">as tangzhong does<\/a>). The crumb almost becomes iridescent and glossy, with dark overtones and a caramelized crust that\u2019s a deep and brooding mahogany color.<\/p>\n<p>To match its gorgeous outer appearance, this beer bread has an intense and rich flavor, thanks to the long fermentation time and the beer and whole grain flours. It\u2019s malty, a little hoppy, and surprisingly, a little chocolatey. In the past, I\u2019ve made a <a href=\"https:\/\/www.theperfectloaf.com\/stout-country-sourdough\/\" data-type=\"post\" data-id=\"460\">stout sourdough<\/a> and even worked in <a href=\"https:\/\/www.theperfectloaf.com\/natural-sourdough-with-spent-beer-grains\/\" data-type=\"post\" data-id=\"990\">spent beer grains<\/a> into a loaf (talk about fiber!). There\u2019s a reason why they call beer \u201cliquid bread.\u201d In the end, they\u2019re essentially the same product.<\/p>\n<p>Let\u2019s look at the flour blend I used for this miche.<\/p>\n<h2 class=\"wp-block-heading\">Video: Watch Me Make This Miche<\/h2>\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\">\n<div class=\"wp-block-embed__wrapper\">\n<noscript><iframe loading=\"lazy\" title=\"Sometimes I just want to bake a really big loaf of #bread. Plus, the high hydration of these miche and their large size mean the loaf lasts for a long time on the counter, letting me enjoy after slice after slice of the flavorful bread.<\/p>\n<p>In this case, I used a hefty portion of <a href=\"https:\/\/www.camascountrymill.com\/shop\/hard-red-spring-wheat-flour\" target=\"_blank\" rel=\"noreferrer noopener\">hard red wheat from Camas Country Mill<\/a> in the Pacific Northwest. Their freshly milled hard red is Yecora Rojo and makes for a strong dough that can take quite a bit of water. It\u2019s also incredibly aromatic and stirs the senses right when mixing. In place of this flour, you can use any hard red wheat (typically any \u201cwhole wheat\u201d you\u2019d find at the market).<\/p>\n<p>I paired this with stone-ground rye for the tangzhong, which added flavor and color to the crust. Prepare the tangzhong \u2013 9:10 a.m.<\/h3>\n<p>In a medium saucepan set over medium-low heat, add the <strong>79g tangzhong rye flour<\/strong> and <strong>197g tangzhong stout beer<\/strong>. Cook, whisking continuously, until the mixture thickens and becomes a paste, 5 to 8 minutes. The beer will initially begin to foam, so keep an eye out that it does not spill over the pan. Initially, whisk vigorously to break up any flour clumps, and continue to whisk well to avoid burning.<\/p>\n<p>Remove the pan from the heat and spread the tangzhong on a small plate to cool. Set aside.<\/p>\n<h3 class=\"wp-block-heading\">3. Additionally, I find that\u00a0<\/span>this extra \u201csoaking\u201d time helps the whole grains fully hydrate.<\/p>\n<p>Warm or cool the autolyse water so that the temperature of the mixed dough meets the final dough temperature (FDT) of 78\u00b0F (25\u00b0C) for this recipe. Place the <strong>flour<\/strong>, <strong>water 1<\/strong> (autolyse), and <strong>tangzhong mixture<\/strong> in a large bowl. Use wet hands to mix until no dry bits remain; the dough will be quite shaggy and loose. Use a bowl scraper to scrape down the sides of the bowl to keep all the dough in one area at the bottom. Cover the bowl and place it near your levain for 1 hour.<\/p>\n<h3 class=\"wp-block-heading\">\u00a04. Using the <em>bassinage<\/em> technique like this helps ensure we don\u2019t overhydrate the dough.<\/p>\n<p>This beer bread miche dough benefits from extra strengthening during mixing. Below, I\u2019ll discuss mixing this dough by hand, but it\u2019s also possible to use a mechanical dough mixer (like a <a href=\"https:\/\/www.theperfectloaf.com\/how-to-mix-bread-dough-with-a-famag-spiral-mixer\/\" data-type=\"post\" data-id=\"24182\">Famag<\/a>). In this case, mix the dough until it smooths and holds itself together, about 5 to 6 minutes on speed 2 in total.<\/p>\n<p>To mix by hand, add the <strong>salt<\/strong> and <strong>levain<\/strong> to the top of the dough in autolyse. Use a <strong>splash of water 2<\/strong> to moisten. Mix thoroughly with wet hands or a dough whisk. <\/p>\n<p>Next, knead the dough for a few minutes using either the <a href=\"https:\/\/www.theperfectloaf.com\/guides\/slap-and-fold\/\">slap and fold<\/a> technique or folds in the bowl. For this dough, I kneaded for about 5 minutes until the dough smoothed and became less shaggy and a little smoother. Transfer the dough back into the bowl, cover, and let rest for 10 minutes.<\/p>\n<p>Don\u2019t add any remaining water if the dough feels very wet and soupy. If it seems cohesive\u00a0but still shaggy, add the remaining\u00a0water 2, mixing it in until absorbed. Once again, scrape the dough out to the counter and use wet hands to slap and fold it for 3-5 minutes, making it smoother and more cohesive. Or, to keep things cleaner, do a series of folds in the bowl.<\/p>\n<p>Transfer the dough to a bulk fermentation container and cover.<\/p>\n<h3 class=\"wp-block-heading\">5. Bulk Fermentation \u2013 2:15 p.m. to 5:45 p.m. (3 hours 30 minutes)<\/h3>\n<p>At a warm room temperature, 74-76\u00b0F (23-24\u00b0C), <a href=\"https:\/\/www.theperfectloaf.com\/guides\/the-ultimate-guide-to-bread-dough-bulk-fermentation\/\" data-type=\"page\" data-id=\"21921\">bulk fermentation<\/a> should take about 3 hours and 30 minutes and need 4 sets of stretches and folds at 30-minute intervals.<\/p>\n<p>After the first 30 minutes of bulk fermentation have elapsed, give your dough its first set of stretches and folds. Grab one side of the dough and stretch it up and over the dough to the other side. Rotate the bowl 180\u00b0 and perform another stretch and fold. Then rotate the bowl 90\u00b0 and do another stretch and fold. Finally, turn the bowl 180\u00b0 and do one last stretch and fold. Cover the dough.<\/p>\n<p>Perform 3 more sets of stretches and folds at 30-minute intervals. Shape \u2013 5:45 p.m.<\/h3>\n<p>After 3 hours and 30 minutes, the dough should have risen in the container and be puffy with some scattered bubbles around the edges, indicating it\u2019s ready to be divided.<\/p>\n<p>Since I\u2019m making a single large loaf, I tend to skip the preshaping step for this dough. It also helps create a more open interior, but it is essential to shape the dough with sufficient tension.<\/p>\n<p>If you want to make shaping easier\u00a0or if you\u2019d like to make two 1,000 g loaves instead, preshaping can help organize the two pieces of dough, but it\u2019s optional. If you\u00a0<a href=\"https:\/\/www.theperfectloaf.com\/guides\/how-to-preshape-bread-dough\/\" data-type=\"page\" data-id=\"11968\">preshape<\/a>, do so lightly and let the dough rest for 15 to 20 minutes\u00a0before continuing.<\/p>\n<p>If you\u2019re making one single large loaf like I do, use one 10\u2033 diameter proofing basket. If you split the dough into two, use 8\u2033 diameter baskets. Regardless, heavily dust the proofing basket(s) with white flour to prevent sticking.<\/p>\n<p>Flour your work surface and the top of the dough in the container. Gently scrape the dough onto the floured work surface. Using floured hands, shape the dough into a large <a href=\"https:\/\/www.theperfectloaf.com\/guides\/shaping-a-boule\/\">boule<\/a>.
