For 12 years, Intrepid leader, Saurabh Joshi, also known as Chai Lord (on Instagram at least), has guided travellers around India to show them what makes his home country so magical. Drinking chai together is a big part of these adventures.\u00a0<\/strong>\u00a0<\/p>\n

Saurabh got his first taste of India\u2019s chai scene as a child in the northwestern city of Jaipur.\u00a0<\/p>\n

\u2018My father was a cricket coach and I used to go with him to sessions. Whenever he would return, he would stop at chai shops to catch up with other cricket coaches,\u2019 he recalls. \u2018That was my introduction to having chai outside of my home.\u2019\u00a0<\/p>\n

Saurabh goes onto add that this ritual has stayed with him. \u2018I [still] drink one chai every day outside of my house or office, just because I want to live in that environment,\u2019 Saurabh says. \u2018I don\u2019t even need company\u2026 you just go and see the theatre for five minutes.\u2019<\/p>\n

Chances are you\u2019ve sipped on a chai (latte) before, but for Saurabh and many locals in India, chai is more than a hot drink \u2013 it\u2019s a big part of family and social life.\u00a0<\/p>\n<\/blockquote>\n<\/figure>\n

Saurabh doesn\u2019t drink, so as an adult, meeting up for chai is kind of like having a beer with friends. \u2018It\u2019s just like going to a pub,\u2019 he says. He shares there\u2019s something ritualistic about sipping on the hot drink, and it\u2019s a great way to enjoy people-watching solo, too.\u00a0\u00a0<\/p>\n

He explains that chai is the great uniting force \u2013 it brings people from different walks of life together. The comfort and simplicity of the drink makes it a memorable everyday experience. \u2018There\u2019s no frills around it, no pretense,\u2019 he says. \u2018It\u2019s a drink for half a dollar.\u2019\u00a0<\/p>\n

There are many kinds of chai made from ingredients from all over India. In the northeast, assam chai is a stronger blend. In the West Bengal region, Darjeeling \u2013 a black tea \u2013 is common. Tulsi chai is known for its health benefits, brewed with holy basil. These are just a few varieties; depending on where you go, there will be a chai unique to the place and the people.\u00a0<\/p>\n

Masala chai is made by adding spices, such as green cardamom and fresh ginger to black tea while it\u2019s brewing. It brings together elements from every corner of India. \u2018The spices come from down south; the tea is coming from the Northeast; the milk is coming from Gujarat and Punjab,\u2019 Saurabh says. \u2018It\u2019s probably the most Indian thing you could have.\u2019<\/p>\n

For Saurabh, making chai is an important form of self-expression. His Instagram moniker, Chai Lord, is inspired by Osho, an Indian philosopher and spiritual leader renowned for his teachings on establishment, human psychology and spiritual experience.\u00a0\u00a0\u00a0<\/p>\n

\u2018[Osho] says that the real form of God, he sees in creativity\u2026 For me, [when] I prepare my chai, it\u2019s like I\u2019m living my creativity.\u2019<\/p>\n

Saurabh says the markers of a good chai are strong body and perfectly proportioned elements. \u2018You want an equal amount of milk and water, and a good balance of spices,\u2019 he says.\u00a0<\/p>\n

For me, [when] I prepare my chai, it\u2019s like I\u2019m living my creativity.<\/p>\n<\/blockquote>\n<\/figure>\n

What\u2019s more, patience is a virtue, and freshness is essential.\u00a0 \u2018It should be well brewed. We don\u2019t make a quick chai \u2013 it should take time,\u2019 Saurabh says. \u2018It should be served fresh every time\u2026 You do not reheat chai or reuse the mixture of spices.\u2019\u00a0<\/p>\n

There are also seasonal and regional considerations to get it just right. \u2018Sometimes when it\u2019s too hot, people try not to add too much ginger, because it heats your body,\u2019 Saurabh explains. \u2018It\u2019s only green cardamom, which adds freshness and sweetness to the chai.\u2019\u00a0\u00a0<\/p>\n

\u2018When you go to the hotter places next to the coastal areas, you don\u2019t find too much spicy chai over there because of the humidity. They make it simple, just like a tea with very subtle spices, and in winter, we have cinnamon black pepper.\u2019\u00a0\u00a0<\/p>\n

Through this work and chatting with locals, Saurabh has discovered new favourite chai spots \u2013 called chai walas \u2013 in different cities.\u00a0\u00a0<\/p>\n

Each spot is rich with its own personal history. \u2018There\u2019s one in Jaisalmer where an old man has been serving tea since the 1980s, so I go to him now when I\u2019m in Jaisalmer, which is our westernmost town in India,\u2019 Saurabh shares.\u00a0\u00a0<\/p>\n

\u2018In Jodhpur, there\u2019s a tea shop called Chandu Ba \u2013 his grandfather was a refugee [during India\u2019s] partition, so he came from Pakistan. They make Irani chai\u2026 which is very different but they\u2019ve \u2018Indianised\u2019 it \u2013 they simmer the tea with spices and reduce them.\u2019<\/p>\n

Visitors always find something to appreciate in the ritual of drinking chai, circling back to Saurabh\u2019s early memories of chai to connect with others. \u2018Chai does actually help me a lot in terms of bonding \u2013 even if people don\u2019t like tea, they just like the whole idea about it,\u2019 he says. \u2018That\u2019s what chai does.\u2019\u00a0<\/p>\n
