When I would make this recipe for my family when my kids were younger, they would wonder why it was called pot roast when I was using the slow cooker. They also wondered what type of meat a \u201cpot roast\u201d could be.\u00a0 I never told them what kind of meat I used.\u00a0 I just let their imaginations take over.<\/p>\n

Recipe Ingredients<\/h4>\n

  • 4 large carrots<\/li>\n
  • 2 small onions<\/li>\n
  • 1 beef chuck roast (3 to 4 pounds [1.4 to 1.8 kg])<\/li>\n
  • 1 teaspoon ground pepper<\/li>\n
  • 2 tablespoons (30 ml) olive oil<\/li>\n
  • 3 cups (710 ml) beef broth, divided<\/li>\n
  • 1\u20444 cup (60 ml) Worcestershire sauce<\/li>\n
  • 3 ounces (85 g, half of a small can) basil tomato paste<\/li>\n
  • 2 teaspoons minced garlic<\/li>\n
  • 1 teaspoon dried thyme<\/li>\n
  • 1 teaspoon dried oregano<\/li>\n<\/ul>\n<\/div>\n

    Recipe Instructions<\/h4>\n
      \n
    1. Wash, peel, and chop the carrots. Peel and dice the onions.<\/li>\n
    2. Rinse the roast and pat dry with paper towels. Season on all sides with the pepper. In a skillet, heat the<\/li>\n
    3. oil over medium-high heat. Add the roast and brown on all sides.<\/li>\n
    4. Transfer the roast to the slow cooker. Add the carrots and onions. In a bowl or measuring cup, combine 1 cup of the broth with the Worcestershire sauce and tomato paste. Stir or whisk to combine. Pour the mixture into the slow cooker. Add the remaining 2 cups broth, garlic, thyme, and oregano and stir to combine.<\/li>\n
    5. Cover and cook on low for 8 hours or on high for 4 hours, or until a thermometer inserted in the center<\/li>\n
    6. of the roast registers 160\u02daF (70\u02daC).<\/li>\n\n<\/ol>\n<\/div>\n

      1. Preparation and Storage for Baby<\/li>\n\n
      2. Remove the beef and allow to cool for a few minutes before slicing. Remove the carrots and onions and set aside to cool. Mash or puree the carrots as needed to serve to your baby. Slice a piece of the roast and then dice it into bite-size pieces or mash or puree to serve to baby.<\/li>\n\n
      3. Store leftovers in the refrigerator for up to 3 days for babies, up to 5 days for adults and in the freezer for up to 6 months.<\/li>\n\n
