Es ist ein Universalbrot, geeignet zum Grillen, Jausnen, Fr\u00fchst\u00fccken oder zum Verschenken. Man macht sich mit diesem Riesending sicher viele Freunde.<br \/><br \/><strong>Rezept f\u00fcr ein Brot mit ca. 2.5 KG<\/strong><br \/><br \/><strong>Weizensauerteig TA 160<\/strong><br \/><br \/>350 g W 700 (550)<br \/>210 g Wasser<br \/>40 g Anstellgut<br \/><br \/>Die Zutaten gut vermengen und bei Raumtemperatur ca. 12-16 Stunden reifen lassen. Der Sauerteig sollte sch\u00f6n reif sein.<br \/><br \/><strong>Hauptteig<\/strong> TA 160<br \/><br \/>Sauerteig<br \/>900 g Weizenmehl W700 (550)<br \/>250 g Weizenvollkornmehl<br \/>690 g Wasser<br \/>25 g Backmalz fl\u00fcssig inaktiv oder Honig <br \/>34 g Oliven\u00f6l<br \/>33 g Salz<br \/><br \/>Alle Zutaten im Teigkneter vermischen. Ca. 6 Minuten langsam und dann noch schnell bis sich der <br \/>teig von der Knetsch\u00fcssel trennt. Der Teig sollte gut ausgeknetet sein.<br \/>In eine Teigware geben und 3 - 3 1\/2 Stunden bei Raumtemperatur reifen lassen. Der Teig sollte deutlich an Volumen zugenommen haben. W\u00e4hrend dieser Zeit den Teig drei Mal dehnen und falten.<br \/>Anschlie\u00dfend den Teig auf ein mit Backpapier ausgelegtes Backblech geben und flach auseinanderziehen. Der so entstandene Teiglinge sollte das ganze Backblech ausf\u00fcllen. Dann kommt eine St\u00fcckgare von ca. 20 Minuten.<br \/>Rautenf\u00f6rmig einschneiden und ab in den gut vorgeheizten Backofen. Schwaden nicht vergessen. Gebacken wird mit 250 Grad fallend auf 220 Grad.Nach ca. 10 Minuten den Schwaden durch \u00f6ffnen der Ofent\u00fcr ablassen.
