At the latter, he provided the <strong>always-excellent lunch<\/strong> for the co-workers. It is a great loss that he has left there, but he was a <strong>wonderful addition<\/strong> to Amsterdam Oost.<\/p>\n<p>The name <strong>FYR<\/strong> is a Swedish term that represents the elements: water, earth, air, and fire. These are heavily incorporated into the cooking, as you will immediately notice the <strong>large wood-fired oven<\/strong> upon entering. This immediately creates a <strong>warm and cosy atmosphere<\/strong>, making you feel like you are stepping into a <strong>welcoming nest<\/strong>.<\/p>\n<p>Previously, <strong>Trattoria Breda<\/strong> was located here, and much of the interior has been preserved. <a href=\"https:\/\/www.instagram.com\/p\/DGnHrd3uGO2\/\" target=\"_blank\" rel=\"nofollow noopener\">In this video<\/a>, you can get a <strong>small impression of the ambience<\/strong>. And yes, the <strong>elements<\/strong> play a role here. <strong>Water<\/strong> naturally represents fish (fresh from the North Sea), <strong>Earth<\/strong> represents fresh vegetables (locally sourced!), <strong>Fire<\/strong> stands for the aforementioned wood-fired oven, and <strong>Air<\/strong> symbolises poultry. However, <strong>vegetarians<\/strong> will also find a full menu here, including <strong>verjus beurre blanc<\/strong> with <strong>salsify<\/strong> and <strong>celeriac from the wood oven<\/strong>.<\/p>\n<p>Additionally, <strong>house-made bread<\/strong> is baked in the wood oven by Chef <strong>Casper<\/strong>, Elian\u2019s right-hand man. Of course, there are <strong>matching wines<\/strong> of top quality as well. <strong>Wine enthusiasts<\/strong> have more to look forward to, as later this year, a <strong>modest wine bar<\/strong> with around twenty wines will open on the right side of the restaurant. A <strong>terrace<\/strong> will also open this spring, where you can sip and soak up the <strong>sunshine<\/strong>.
