\t\t\tHappy New Year!!! \u00a0Here\u2019s a great winter\u2019s cookies to enjoy with your hot cup of tea!! Cranberry cookies sandwiched with gooey gooey Nutella. \u00a0Talk about a great combination! \u00a0The first month of 2022 is filled with NUTELLA recipes!! \u00a0It\u2019s going to be great year!!<\/p>\n

\"\" \u00a0\"\"\u00a0\u00a0\u00a0\u00a0\"\"<\/p>\n

Here\u2019s the first post of 2022!!! \u00a0I am so excited to share this cookie with you!!! \u00a0 I\u2019m calling this a great winter\u2019s cookies because the cranberries is fitting as a winter\u2019s dessert. \u00a0It\u2019s so tart and the Nutella gives it another sweetness to it. \u00a0And is it hard to make? \u00a0Oh not at all!! \u00a0Most of the ingredient is probably already in your pantry and you can make this before your afternoon tea.<\/p>\n

First cream the butter and the powdered sugar until it\u2019s light and fluffy. \u00a0It usually takes about 5-7 minutes to get all the butter and powdered sugar mixed together. \u00a0Remember to always scrape the sides and bottom of the bowl so that it\u2019s really mixed in. \u00a0Gently add in the flour and mix it altogether.<\/p>\n

\"\"<\/p>\n

\"\"Then add in the finely chopped cranberries. \u00a0Not cut in half but really finely chopped. \u00a0I think it took me a few minutes to cut them this small so really take your time. \u00a0And I would not just dump the cranberries because then you\u2019d have clumps. \u00a0I would sprinkle the cranberries as the mixer is in low speed.<\/p>\n

After you roll out the cookies and cut it into 2 inch circles, bake it for about 12-14 minutes, just until the sides are lightly browned. \u00a0Let it cool completely before spreading the Nutella on the cookie.<\/p>\n

\"\"<\/p>\n

Here\u2019s the best part!!! \u00a0Nutella!!! \u00a0Raise your hand if you ALWAYS have Nutella in your cabinet! \u00a0\ud83d\ude4b\ud83c\udffb\u200d\u2640\ufe0f We always have it in our cabinet because it\u2019s my son\u2019s favorite spread. \u00a0 \u00a0So when I was about to make this recipe, I just find it in my cabinet et voila!! \u00a0Cookie Sandwich making is commencing!!!<\/p>\n

Spread the bottom of one cookie with the Nutella. \u00a0However much is up to you!! \u00a0Then put another cookie on top to make it a sandwich.<\/p>\n

Look at this beauty!!! \u00a0Oh I can\u2019t wait to drink it with tea!!<\/p>\n

\nCRANBERRY NUTELLA SANDWICH COOKIES<\/span>

\n These rich and delicious cookies are a great winter’s treat!! The dried cranberries gives it some tang and the Nutella gives it the sweetness to balance it out. Heat up the kettle and make your tea!!<\/span> <\/p>\n<\/p><\/div>\n<\/p><\/div>\n

    \n In a stand mixer bowl, cream butter and confectioners’ sugar on high speed until light and fluffy, 5-7 minutes. Add in vanilla and mix it well.<\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n In medium bowl, whisk flour and salt. Gradually add into creamed mixture. <\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n

    \n While the mixer is on low speed, sprinkle in the cranberries to separate it. Mix it again until it comes together. <\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n Divide dough in half and shape each half into a disk. Wrap and refrigerate 30 minutes or until firm enough to roll.<\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n Preheat oven to 325\u00b0. Line baking sheets with parchment paper.<\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n Place one half of the disc in between 2 parchment paper. Roll each portion of dough to 1\/4-in. thickness. Use a 2 in round cookie cutter to cut the cookies<\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n Place the cookies 2 in. apart and bake until edges begin to brown, 10-12 minutes. <\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n Remove from pans to wire racks to cool completely. <\/span> <\/p>\n<\/p><\/div>\n<\/li>\n

    \n When the cookies are cooled, spread Nutella over bottoms of half of the cookies; top with remaining cookies. Store in an airtight container.<\/span> <\/p>\n<\/p><\/div>\n<\/li>\n<\/ol><\/div>\n<\/p><\/div>\n<\/div>\n<\/div><\/div>\n<\/p><\/div>\n<\/p><\/div>\n<\/p><\/div>\n<\/div>\n
