Schnell ist in diesem Falle ein relativer Begriff. So ca. sieben Stunden sollte man sich schon Zeit nehmen. F\u00fcr mich ist das ein \u201eschnelles\u201c Brot. Normal nimm ich mir mehr Zeit f\u00fcr ein ordentliches Brot. Aber Heute soll es schnell gehen \u2013 ausnahmsweise.<\/p>\n<p><strong>Rezept f\u00fcr ein Brot mit ca.<\/strong><br \/><strong>Autolyseteig:<\/strong><br \/>900g Weizenmehl W700<br \/>100g Roggenmehl R960<br \/>600g Wasser <br \/>Alles gut vermischen und ca. 90 Minuten Autolyse (also einfach bei Raumtemperatur stehen lassen)<\/p>\n<p><strong>Hauptteig:<\/strong><br \/>1600g Autolyseteig<br \/>22 g Salz<br \/>10 g frische Hefe<br \/>100 g Wasser<br \/>S\u00e4mtliche Zutaten zu einem glatten Teig kneten und in einer einge\u00f6lten Plastikwanne oder Sch\u00fcssel ca drei Stunden bei Raumtemperatur gehen lassen.  Drei Mal strecken und Falten (alle 30 Minuten).<br \/>Anschliessend zu einem runden Laib wirken und in einem bemehlten G\u00e4rkorb wieder bei Raumtemperatur ca. eine Stunde sch\u00f6n aufgehen lassen.<br \/>Das Brot sollte richtig kr\u00e4ftig ausgebacken werden.<\/p>\n<p>Gebacken wird bei 250 Grad fallend auf 200 Grad ca. 45 Minuten.
