So should making great food to serve at summertime celebrations.\u00a0 Here at Griller\u2019s Gold, one of our summertime faves are pork baby back ribs. Now, many grillers and barbecuers are afraid of them \u2013 and there are a thousand techniques out there including the \u201c3-2-1\u201d method, preboiling them (NO NO NO!!!), fast cooking (it works, but not as good), etc.\u00a0 So our topic today is how to make GREAT ribs with an easy to make method.<\/p>\n<p>The great thing is that a pellet-fueled grill makes this super easy.\u00a0 The grills are thermostatically controlled for even temps, and they self-feed fuel so there\u2019s no fire maintenance. Speaking of fuel, Griller\u2019s Gold Premium Hardwood pellets give great flavor to ribs.\u00a0 We\u2019ve used pretty much every pellet we make in making ribs, and they all work great, but that said, for pork baby backs, we love either <a href=\"https:\/\/grillersgold.com\/bbq-pellets\/\">Hickory or Fruitwood Blend<\/a>.\u00a0 So let\u2019s do this!<\/p>\n<p>This recipe delivers ribs that are tender, not chewy, with a nice clean \u201ctug\u201d of the meat coming off the bone. They are not \u201cfall off the bone\u201d ribs \u2013 those usually only happen when you braise ribs in a sauce after smoking.<\/p>\n<h2 class=\"wp-block-heading\">What to Buy<\/h2>\n<p>Pork Baby Back ribs \u2013 these are the rib sections from the back of the hog nearest the spine and have a lot of meat on them \u2013 much more meaty than St. Louis cut ribs.\u00a0 We like to buy the minimally-processed ribs \u2013 often you\u2019ll find them with a notation on the package of \u201ccontains up to 10% of a solution of \u2026\u201d which is that they are injected with a brining solution.\u00a0 We find those to be too salty tasting for our taste.\u00a0 Great sources for minimally processed ribs are at Costco and Sam\u2019s of course \u2013 and they come in 3 packs.\u00a0 Figure a half-slab of ribs per person, so a 3 pack should serve 12.<\/p>\n<figure class=\"wp-block-image size-large\"><a href=\"https:\/\/grillersgold.com\/wp-content\/uploads\/2024\/06\/ribs-on-cookie-sheet.jpg\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"576\" src=\"https:\/\/grillersgold.com\/wp-content\/uploads\/2024\/06\/ribs-on-cookie-sheet-1024x576.jpg\" alt=\"Ribs on a cookie sheet prepped for the grill\" class=\"wp-image-4922\" srcset=\"https:\/\/grillersgold.com\/wp-content\/uploads\/2024\/06\/ribs-on-cookie-sheet-980x551.jpg 980w, https:\/\/grillersgold.com\/wp-content\/uploads\/2024\/06\/ribs-on-cookie-sheet-480x270.jpg 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) and (max-width: 980px) 980px, (min-width: 981px) 1024px, 100vw\"\/><\/a><\/figure>\n<h2 class=\"wp-block-heading\"><strong>Prepping Your Ribs\u00a0<\/strong><\/h2>\n<p>Generally speaking, ribs straight out of the package will have a membrane on the underside.\u00a0 That needs to get removed as it gets chewy as it cooks.\u00a0 Costco ribs frequently have had it removed. You can tell if it was already removed or not by how the underside of the ribs look \u2013 if they have a shiny\/glossy coating \u2013 that\u2019s the membrane.\u00a0<\/p>\n<p>Now some people think this is a very difficult thing to do, but they just haven\u2019t found the right technique yet.\u00a0 <\/p>\n<p>Here\u2019s what to do:<br \/>1)\u00a0 Get a butter knife \u2013 up, a non-sharp butter knife is ideal for this technique.<\/p>\n<p>2)\u00a0 Work from the side of the ribs away from the backbone. In the photo below one end of the ribs is sharply cut off at a near 90 degree angle while the other side sort of slants away. Start at the sharp cut off end.<\/p>\n<p>3)\u00a0 At the rib that\u2019s closest to the middle of the slab, slip the butter knife under the membrane \u2013 it\u2019s sort of a scraping action where you\u2019re scraping the membrane up off the bone. Once the knife is inserted about half the length of the bone, lever it upwards, levering the membrane up \u2013 you can hear it tearing away.\u00a0 With a clean (not greasy\/slimy) hand, get your thumb under the membrane and start pulling upwards \u2013 it will start peeling away. Work to one end and pull the membrane completely off, and then work the other direction to finish. And it\u2019s simple to make.\u00a0 For enough Rub for 3 slabs of ribs: <\/p>\n<ul class=\"wp-block-list\">\n<li>2 T (tablespoons) EACH of kosher salt, sugar, ground pepper, paprika, garlic powder and onion powder<\/li>\n<li>1 T chili powder<br \/>2 t (teaspoons) dry mustard powder (we like the Colman\u2019s brand)<\/li>\n<li>1 t ground cumin<\/li>\n<li>\u00bd t ground ginger<\/li>\n<\/ul>\n<p>Mix up well and put it into an empty shaker container. By the way, we use so much of this that we make it in quantities where the tablespoons above turn into cups!<\/p>\n<p>Generously shake the rub over the meaty side of the ribs, you don\u2019t want to sprinkle it, you want to cover it!\u00a0 See the photo below to see how much you need to apply.\u00a0 Flip the ribs over and and give a good shake on the bone side but you don\u2019t need as much on that side.<\/p>\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh7-us.googleusercontent.com\/docsz\/AD_4nXdRBBLGKcipQ9LTitFradQlskbSC71Rgvu4061Vu79SYwafnuMa17I4BwEBHspzhjIv-UuG0ikoS_eS2qsYkPg7sPVXcFVPQcYAr98h8UyC1Is6XaU48XI6LYxUaRldjbg7vIY4df0U2tmq8UuSamgjVFI?key=nYADi8eAcD-CkK04FEbqDw\" alt=\"Adding a rub to a set of ribs\"\/><\/figure>\n<p>That\u2019s it, let\u2019s cook!<\/p>\n<h2 class=\"wp-block-heading\">Grill Prep for Your Baby Back Ribs<\/h2>\n<p>Load your pellet grill\u2019s hopper with <a href=\"https:\/\/grillersgold.com\/bbq-pellets\/\">Griller\u2019s Gold pellets<\/a> and fire it up to deliver 225F temp (the reason we say \u201cdeliver\u201d is that some grills run a little higher, some a little cooler.\u00a0 It pays to know how your grill behaves).\u00a0 We like to let ours preheat for a solid 20 minutes, even though it comes \u201cto temp\u201d in 10 \u2013 it helps to get all that metal heated up evenly.<\/p>\n<p>And go put them on the grill \u2013 meaty side up, bone side down. Leave some room around them to let the air and smoke circulate.\u00a0 On the pellet grill we use the most (which is pretty small, truthfully), 3 slabs fit perfectly \u2013 2 on the main grate, 1 on the upper. Close the lid, set a timer for 3 \u00bd hours and GO AWAY.\u00a0 Seriously, leave it alone.\u00a0 If you\u2019re lookin\u2019 they are NOT cookin\u2019.\u00a0 You don\u2019t need to baste, spritz, etc.\u00a0 They will cook just fine without your fussing.<\/p>\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh7-us.googleusercontent.com\/docsz\/AD_4nXeGjApW4ctGv7mw3OSUnOUC2d-7J7OL62tasxbVPN-OPtQh3WIaYnjrv078cN3FiGpcg_wiQIZ6Npg4hG6swGz6sUmMS7anDF1caWbj8bfx7AfXkF664ru_AVheWnestfgVsPNYreeaMdp89RGObZokqHO3?key=nYADi8eAcD-CkK04FEbqDw\" alt=\"3 racks of ribs on the smoker\"\/><\/figure>\n<p>At 3 \u00bd hours, come back to do the \u201ccrack test\u201d.\u00a0 This is where you lift a slab up with a pair of tongs in the middle. If the ribs are done, you\u2019ll see the bark crack and slab start to split in half.\u00a0 When you see that split or crack, they are done on the grill \u2013 see the picture below.<\/p>\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh7-us.googleusercontent.com\/docsz\/AD_4nXcPZLVXnNuaMX_E9e5TNhfWI5Qe-0VNKHIJPJ9XRdn8YCmj5lHJanfUjpU104e6Jzxtwr7TVaJrcBMi1gxiuwt_Eekz0eJaN-FUCE1j1Adsm01My-ISSMp6ghF6pc0zub4_jr4Z3L61hE3b5SiNUbYEE9ri?key=nYADi8eAcD-CkK04FEbqDw\" alt=\"An example of the rib &quot;crack test&quot; \"\/><\/figure>\n<p>Please note, not all slabs will get done at the same time \u2013 but that\u2019s ok because you\u2019re going to rest these!\u00a0 If you have a slab that\u2019s not quite cracking at the same time as the others, give it more time on the grill, usually an extra half hour will do the trick.<\/p>\n<h2 class=\"wp-block-heading\">Resting Your Ribs<\/h2>\n<p>Here\u2019s where this recipe becomes great for summer fun. We like to make these starting pretty early in the morning so that they are done late morning \u2013 say on at 7:30 and off around 11:00 AM.\u00a0 They can go in the resting cooler for several hours until you\u2019re ready to remove them, sauce them up and serve them!\u00a0 Now this said, if you are having these for lunch, you can do without the rest, but your ribs will be more tender and tasty if you can build in some rest time.\u00a0<\/p>\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh7-us.googleusercontent.com\/docsz\/AD_4nXfn8bLB4-6mmUGxByjxFMvcWkyrlFZXJzRGvhdAhJ-UgqqeMKjMCjVPvQc0DZDkoZ47dRav8KEB06PChHdrIkvPkWf5aiVw4QbnGuujewSVK-YvEPN1QFCVyfMsUCnydRPE0-ZoMwCU2k3NVgQD6ztfOKd5?key=nYADi8eAcD-CkK04FEbqDw\" alt=\"Two racks of ribs pulled off the grill and on a cookie sheet\"\/><\/figure>\n<h2 class=\"wp-block-heading\">Serving Your Baby Back Ribs<\/h2>\n<p>We like to cut the ribs at this point into serving\u00a0 pieces \u2013 generally 2 ribs per piece.\u00a0 Then make a double layer of heavy duty foil, pile the rib pieces in and close it up like a packet.\u00a0 For 3 slabs it requires two packet.\u00a0 Nestle the packets in the bottom of a picnic cooler. Then fold up an old bath towel and put it on top for some extra insulation, and close up the cooler.\u00a0 Let rest at least an hour and up to 6 hours.\u00a0\u00a0<\/p>\n<p>When you\u2019re about 20 minutes from dinner, relight your pellet grill to 400F. Or, if you have one, a gas grill is fine for this step \u2013 run it at medium heat.\u00a0 Before you head to the grill, generously brush your favorite barbecue sauce over the meaty sides of the ribs.\u00a0 Head out to the grill, put the rib pieces sauce side down and close the grill. Set a timer for 3 minutes (time is important here as you don\u2019t want to burn the ribs). At 3 minutes, give them a flip to the bone side down and heat for another 3 minutes.
