They do not<br \/>\nhave to be cooked through. Remove to a large platter.<\/div>\n<ul>\n<li>\u00a0olive oil<\/li>\n<li>\u00a01 carrot, finely<br \/>\nchopped<\/li>\n<li>\u00a01 small celery stalk,<br \/>\nfinely chopped<\/li>\n<li>\u00a02 tablespoons finely<br \/>\nchopped onion<\/li>\n<li>\u00a0salt and pepper<br \/>\n(again, taste before adding this additional salt)<\/li>\n<li>\u00a08 cups beef or<br \/>\nchicken stock (original recipe calls for 4 cups but I like having extra broth)<\/li>\n<li>\u00a0four handfuls leafy<br \/>\ngreens such as spinach, arugula or kale<\/li>\n<li>\u00a01 cup bite-size <u>cooked<\/u><br \/>\npasta such as ditalini or orzo (optional)<\/li>\n<li>\u00a0Extra grated parmesan for serving<\/li>\n<\/ul>\n<p><\/p>\n<div class=\"MsoNormal\">\nIn a large pot over medium heat, add olive oil, carrot,<br \/>\ncelery, onion, and salt and pepper, and cook until vegetables have softened<br \/>\nslightly.\u00a0<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEg7XSLIeT5jZcDl114ZPMjfs3jiCn7-2hR2BsKlIVxZ1NpFcETJPObuN7pjrPi_8uVXPALbRHh21qQhoYLbiiHvxRGL6K1EhkvCRvzOx7ZEKalQrtfU7Fqs9pOkEREh8ej2NYUnVNUvYc4\/s1600\/leslie-5.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"400\" src=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEg7XSLIeT5jZcDl114ZPMjfs3jiCn7-2hR2BsKlIVxZ1NpFcETJPObuN7pjrPi_8uVXPALbRHh21qQhoYLbiiHvxRGL6K1EhkvCRvzOx7ZEKalQrtfU7Fqs9pOkEREh8ej2NYUnVNUvYc4\/s400\/leslie-5.jpg\" width=\"300\"\/><\/a><\/div>\n<p>\nAdd stock and bring to a boil.
