{"id":121492,"date":"2025-03-09T05:35:53","date_gmt":"2025-03-09T05:35:53","guid":{"rendered":"https:\/\/peraltafinancing.com\/recipes\/category-a-b\/baking-category-a-b\/chocolate-pecan-bourbon-cake-nick-malgieri\/"},"modified":"2025-03-09T05:35:53","modified_gmt":"2025-03-09T05:35:53","slug":"chocolate-pecan-bourbon-cake-nick-malgieri","status":"publish","type":"post","link":"https:\/\/fivemor.com\/?p=121492","title":{"rendered":"Chocolate Pecan Bourbon Cake \u2014 Nick Malgieri"},"content":{"rendered":"<p> <br \/>\n<\/p>\n<div>\n<p class=\"\" style=\"white-space:pre-wrap;\">8 ounces bittersweet chocolate, cut into 1\/4-inch pieces<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/2 cup granulated sugar<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/2 cup all-purpose flour (spoon flour into dry-measure cup and level off)<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Pinch of salt<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">5 large eggs<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">3 tablespoons best-quality Bourbon<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/2 cup turbinado or dark brown sugar<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">4 1\/2 ounces pecan pieces, lightly toasted, cooled, and coarsely ground<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Whipped cream for serving<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00a0<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">One 8-inch round 2-inch deep pan, buttered and lined with a disk of parchment<\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00a0Set a rack in the upper third of the oven and preheat to 350 degrees.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Melt butter in a saucepan over medium heat, allowing it to sizzle and get really hot. Remove from heat, add chocolate and whisk smooth.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Whisk the granulated sugar, flour, and salt together and add all the eggs and Bourbon. Whisk together smoothly.\u00a0<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Stir the brown sugar into the butter and chocolate mixture and stir into the batter. Fold in the pecans.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Pour the batter into the prepared pan and smooth the top.
