Culver\u2019s in Payson, Arizona<\/figcaption><\/figure>\n

In the summer of 2022, two of my sisters spent a nearly three weeks in Switzerland, Austria and Germany. They visited the breathtaking\u00a0snow-capped mountains of the Alps and took Europe\u2019s\u00a0highest cable car to the top of the Matterhorn. \u00a0They walked in picturesque villages reminiscent of your favorite fairy-tale as well as medieval towns resplendent with covered bridges, waterfront promenades, historic buildings replete with frescoes painted by the masters, and sun-drenched plazas with bubbling fountains. \u00a0Naturally, my questions about their vacation were centered on cuisine. \u00a0Dolores, one of my sisters, recalled most fondly the bread and butter served with every meal on their excursion. \u00a0She\u2019s a Gardu\u00f1o after my own heart.<\/p>\n

During our years in Europe, my Kim and I were surprised at the ubiquity of butter on sandwiches. \u00a0It didn\u2019t matter what other ingredients were used in the construction of a sandwich; each slice of bread was buttered lavishly. \u00a0Our favorite was a buttered floury bap with Branston pickle and Cheddar cheese. \u00a0We also grew to love butter sandwiches with bacon. \u00a0Frankly, a butter sandwich with extra butter was also quite good. As common as butter was in England (where we lived), the French slathered it on even more generously. \u00a0Croissants dripping with butter and topped with cheese and ham were fabulous.<\/p>\n

Butter Burger<\/figcaption><\/figure>\n

While Europeans have continued to enjoy butter, across the pond colonists have largely eschewed butter in pursuit of more healthful alternatives like Diet Cokes with their Big Macs. \u00a0 Americans were made to feel guilty if they enjoyed butter on a baked potato or toast. \u00a0Nutritionists and researchers touted margarine as a more healthy alternative, one made from trans fats instead of saturated fats. \u00a0Then it was discovered that the trans fats prevalent in margarine raised levels of bad cholesterol and lowered levels of good cholesterol\u2013a double whammy. \u00a0As seems to be the case with fake news, butter remains on the list of foods that are bad for you.<\/p>\n

Since 1936, the venerable Solly\u2019s Grille<\/strong><\/a> in Milwaukee has snubbed its nose at the haters who would desecrate burgers with lesser condiments such as mustard and (gasp) ketchup). \u00a0Solly\u2019s is the peerless purveyor of the butter burger: one-third-pound sirloin patty topped with what appears to be an equal amount of sweet and creamy Wisconsin butter. A river of artery-clogging fat runs down the sliced burger and resembles a small buttery lagoon at the bottom of the plate. It\u2019s a treasured regional specialty that no one in their right mind would serve anywhere else.<\/p>\n

Culver\u2019s Bacon Deluxe<\/figcaption><\/figure>\n

That is nobody but Culver\u2019s, a burger franchise serving the Midwest since 1984 with its own version of a better burger. Culver\u2019s version of the butter burger\u00a0is made from ground chuck seared on a hot grill at 475 degrees then sandwiched between a \u201clightly\u201d (that\u2019s a matter of opinion) buttered, toasted bun. \u00a0Melted butter doesn\u2019t exactly run down your arms as it does at Solly\u2019s, but if you\u2019re intimate with the inimitable flavor of butter, you\u2019ll enjoy its presence on the burger.<\/p>\n

21 December 2022<\/strong>:\u00a0 If you\u2019re counting calories or are cholesterol conscious, Culver\u2019s has a diverse menu featuring more than 45 other items including salads. If you want to risk an angioplasty, try Culver\u2019s ButterBurger deluxe<\/strong><\/em>, available as a single, double or jumbo. The jumbo lives up to its name with three patties sandwiched between two large bakery buns and served with mayonnaise, pickles, onions, lettuce, tomato and American cheese. If you really have a death wish, you can also add strips of bacon to the deluxe. With or without bacon, it\u2019s one of the saltiest \u00a0and most \u201cwell done\u201d (crispy edges, very little moistness) burgers we\u2019ve ever experienced and were it not for an aversion for salty foods, we might have enjoyed it more. Culver\u2019s waffle fries are desalinated in comparison.<\/p>\n

Cheese Curds<\/figcaption><\/figure>\n

21 December 2022<\/strong>: Culver\u2019s is also famous for their frozen custard<\/strong><\/em> made fresh daily from premium ice cream. Served cold, you can have the custard on a cake cone, waffle cone or dish in sizes ranging from single to triple scoops. The \u201cflavor of the day\u201d includes several creative and sometimes seasonal flavors with the common denominator being great, albeit very sweet, taste. Culver\u2019s ice cream products are nearly as sweet as their burgers are salty.<\/p>\n

21 December 2022<\/strong>: The frozen custard can also be enjoyed as a malt or shake or you can eat \u201cConcrete<\/strong><\/em>,\u201d a Culver\u2019s specialty made with three scoops of vanilla frozen custard and a topping and (or) flavor of your choice. Toppings include M&M, Oreo, Snickers, Butterfingers, Reese\u2019s Pieces and more. Shake and malt flavors include chocolate, hot caramel, mint, hot fudge and even root beer, all served cold.<\/p>\n

Reuben<\/figcaption><\/figure>\n

5 January 2025<\/strong>:\u00a0 Though Culver\u2019s has earned its nationwide reputation as a purveyor of butter burgers, it\u2019s got a rather diverse menu.\u00a0 For example, the menu is festooned with a number of chicken sandwiches and chicken tenders as well as an enviable sandwich menu that includes a grilled reuben melt<\/strong><\/em>, pork loin sandwich, harvest veggie burger, grilled cheese and corn dog (another Wisconsin favorite).\u00a0 Rarely can I resist a reuben (hand-trimmed, lean corned beef, cured in delicately seasoned brine and slow cooked. Piled high with melted, real Wisconsin Swiss, sauerkraut and Thousand Island dressing. All sandwiched between slices of lightly buttered, toasted rye bread).\u00a0 There\u2019s much to appreciate about Culver\u2019s version.\u00a0 The lightly grilled rye bread is superb, the butter keeping it moist and lending butter\u2019s inimitable goodness.\u00a0 The sauerkraut and Thousand Island dressing are in perfect proportion so as not to offset one another.\u00a0 Reuben afficionados, however, would like at least twice as much as the penurious amount on Culver\u2019s reuben.\u00a0 Still, it\u2019s so much better than the burgers.<\/p>\n

5 January 2025<\/strong>:\u00a0 Turophiles often worship at the altar of European cheeses.\u00a0 What we don\u2019t always realize is that Wisconsin\u2019s cheeses often sweep awards at international cheese competitions.\u00a0 Wisconsin ranks fourth in the world in terms of total cheese production at 2.86 billion pounds, behind the rest of the United States, Germany, and France, and just ahead of Italy.\u00a0 Intrigued by a poster hanging overhead touting \u201ccurd nerds,\u201d we decided to try the Wisconsin cheese curds<\/strong><\/em> (Made using the freshest, un-aged yellow and white Wisconsin cheddar cheese, deep-fried golden brown for a warm buttery crunch. Provided exclusively to Culver\u2019s by La Grander Hillside Dairy in Stanley, Wisconsin).\u00a0 Call us \u201ccurd nerds\u201d if you will, but we\u2019re fans.<\/p>\n

There are now seven Culver\u2019s restaurants in the great state of Texas and several more in Arizona so maybe there\u2019s hope that this franchise will soon be moving west to New Mexico.<\/p>\n
