Adding coffee when making a recipe with cocoa powder enhances its flavor (I also do this in my famous <a href=\"https:\/\/milkandpop.com\/sourdough-chocolate-cake\/\">sourdough chocolate cake<\/a>).<\/p>\n<p class=\"has-background\" style=\"background-color:#fff5df\">If you don\u2019t want to use coffee, replace it with more milk.<\/p>\n<p><strong>Sourdough discard:<\/strong> Use regular sourdough discard or leftover <a href=\"https:\/\/milkandpop.com\/how-to-make-sourdough-starter\/\">chocolate discard<\/a> if you have some. Both create delicious, moist muffins\u2014though the chocolate starter makes them even richer!<\/p>\n<p class=\"has-background\" style=\"background-color:#fff5df\">You can also use an active sourdough starter if that\u2019s what you have.<\/p>\n<p><strong>Oil:<\/strong> Use vegetable, avocado, or your preferred oil, but avoid strong-tasting oils like olive oil. You can swap it for butter, but that will make drier muffins.<\/p>\n<p><strong>Baking soda:<\/strong> Check that your baking soda hasn\u2019t expired.
